My favorite yummy healthy summer treat? Gazpacho!

8 large- vine ripened tomatoes, diced into 1/4 inch cubes including seeds and juice; 1 and 1/2 cucumber, peeled and cut into 1/4 inch cubes; 1 yellow and 1 orange bell peppers, cored and seeded, cut into 1/4 inch cubes; and 1 medium red onion, cut into 1/4 inch cubes. Add 1/2 cup roughly chopped fresh cilantro, 2 and 1/2 tablespoons red wine vinegar, juice of 1/2 lime and 1/2 lemon, 1/2 tablespoon Worcestershire sauce and 1/2 tablespoon of Tabasco.  Combine all ingredients in a large bowl, and crush with your hands.  Place half of the mixture in a food processor and puree. ( If you prefer chunkier soup skip this step, if you prefer smoother soup puree entire batch.) Return the puree to the original mixture and add Sea salt and ground black pepper to taste. Add 1/4 cup extra virgin olive oil.  Refrigerate overnight, ladle into bowls and serve with fresh avocado slices.
